Strawberry ice cream

Someplace online I found a "recipe" for making strawberry ice cream (but I cannot find it now) and I did what I always do, modified it:

My Strawberry Ice Cream:

Measure or weigh 2/3 cup or 140 grams of frozen strawberries into a microwave safe bowl and"nuke" until slightly soft.  Place into your small food processor, add 1 sliced banana which has been frozen and process until blended into a soft ice cream, stopping to scrape the sides so that it mixes evenly. My son prefers his with no sweetener, I add a few drops of Sweetleaf "Sweet Drops" vanilla creme liquid sweetener.  You may add your choice of sweetener to the berries prior to processing or even sprinkle 1/2 tablespoon of sugar over the berries prior to microwaving.  Eat immediately or freeze for later.


The who, the why, and the what

I am Lillian Mahoney, a nearly 79 year old widow who is attempting to live a healthier, happier, and yes, younger life.  For quite a while now I have been using www.myfitnesspal.com to keep track of my "diet" and my exercise.  I have recently discovered that I can view my daily or weekly nutrition through "myfitnesspal".  I am now working to keep my daily meal plans in line so that I am getting the right balance in my diet.  One problem I have been having is getting in enough potassium and I am finding that it is not quite as simple as it sounds.

Although my son is my apartment-mate and we go shopping for groceries together, he prepares his meals and packs his lunch and I fix my own meals.  My son is the one who turned me onto "myfitnesspal" and more recently the ability to check my nutrition.  We occasionally share things we have prepared, such as when I made "ice cream" for him to take to work.

I have access to the treadmill in our apartment and I am now doing a 38-minute workout plus 5-minute cool down:  Currently, 2.2 mph at level 10.  Soon I hope to be using the swimming pool for exercise in addition to the treadmill.  I have lost over 30 pounds in the four years I have been in Houston and still have a way to go but I feel so much better than I did then.

I am researching recipes and foods that I can make as one serving or that I can freeze for quick meals on a day I have spent making jewelry.  In order to keep track of those recipes, I plan to incorporate them into my blogs.
